DESCRIZIONE COMPLETA

Varietà: Ombligon è il termine locale usato per questa varietà autoctona Etiope (Ethiopian Landrace). "Ombligo" in spagnolo significa ombelico, e questo è il motivo per cui i locali si riferiscono a questa varietà in tal modo, poiché la ciliegia presenta una piccola protuberanza che ricorda un ombelico. È una varietà rara e si dice che sia arrivata in Colombia dall'America Centrale, ma non esistono registrazioni precise sulla sua provenienza o sulla data di arrivo.

Raccolta: Le ciliegie vengono raccolte al punto ottimale di maturazione dalle piante più sane e con il fogliame migliore. La raccolta avviene in giorni senza pioggia per garantire un alto contenuto zuccherino e una minima presenza di acqua. Le ciliegie vengono disinfettate con alcol, vengono rimossi i "floaters" (le ciliegie che galleggiano) e vengono classificate le ciliegie migliori.

Processo di Fermentazione: Il processo si articola in più fasi complesse:

  1. Prima fermentazione/Ossidazione: Le ciliegie vengono poste in fusti di plastica aperti per 30 ore a temperatura ambiente, di cui 20 ore a una temperatura di 30°C.

  2. Fermentazione Anaerobica: Segue una fermentazione anaerobica in fusti di plastica chiusi per 24 ore, a temperature comprese tra 16-18 °C.

  3. Ossidazione in vasca: L'ossidazione prosegue per 30 ore in vasche, con l'obiettivo di portare il caffè a una temperatura di 40°C.

  4. Seconda fermentazione Anaerobica Controllata: Successivamente, le ciliegie vengono inserite in un serbatoio BioMaster, che permette di controllare una seconda fase di fermentazione anaerobica per 12 ore a una temperatura controllata e costante di 20°C.

  5. Immersione con Mosto: La fase finale consiste nell'immergere le ciliegie in acqua calda a 32°C per 36 ore, aggiungendo "mosto" della stessa varietà Ombligon. Questo processo esalta e amplifica le note fruttate nel profilo.

  6. Shock Termico (Quenching): Infine, viene eseguito un trattamento di "quenching": le ciliegie vengono immerse in acqua calda (50°C) per 5 minuti e poi raffreddate (20°C) per un totale di 30 minuti, al fine di arrestare la fermentazione e uccidere i microrganismi. Il "quenching" è un metodo specifico per raffreddare rapidamente le ciliegie di caffè, un passaggio critico in vari metodi di lavorazione.

Essiccazione: Il caffè viene essiccato in un deumidificatore in acciaio inox a chiusura ermetica fino a raggiungere il 20% di umidità. Segue un periodo di riposo di 12 ore, dopodiché l'essiccazione prosegue per 16 ore fino a raggiungere l'11% di umidità.

Questo sistema, denominato "Pristine Precision Drying", viene utilizzato per mantenere la qualità incontaminata del caffè durante la fase di essiccazione.
